Salsa Chicken

This is one of our favorite, go-to meals. Its super easy and a perfect, quick dinner on those busy weeknights.

Ingredients:


  • 4 boneless, skinless chicken breasts
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheese
  • 1 ½ cups of your favorite Todd’s Salsa


Directions:


  1. Season both sides of the chicken breasts with the taco seasoning.
  2. Place chicken breasts in a greased 9x13 pan.
  3. Pour salsa over the top of the chicken breasts.
  4. Bake at 375° for 25-35 minutes, until the chicken reaches an internal temperature of 165°.
  5. Remove dish from oven and sprinkle the chicken breasts with cheese then return to the over for another couple minutes, until the cheese has melted.
  6. When done, you can serve this with some sour cream on top or maybe a few fresh cilantro leaves.

Todd's Spanish Rice

Ingredients:


  • 2 tablespoons oil
  • 1 ½ cups of uncooked white rice
  • 2 cups chicken broth
  • 1 cup of your favorite Todd’s Salsa


Directions:


  1. Heat oil in large skillet over medium heat.
  2. Add rice to skillet and stir often When rice begins to brown, add chicken broth and salsa. Cover then reduce heat and simmer for 20 minutes, until the liquid has been absorbed.
